Hello!
I'm going to purchase a new mandolin in the $700 range and I'm torn between the Eastman MD 315 and the Kentucky FM 675. What are some of the differences? I won't have a chance to try either of those mandolins in person. I play in two country bands and will use the mandolin for celtic/bluegrass/and country music.

Well .... the fingerboard on the Eastman has a radius and the Kentucky is flat. The Kentucky is completely bound front back neck headstock and the Eastman is only bound on the top. This is a cost cutting measure on the Eastman. Generally the Eastman mandolins have a brighter sound then the Kentucky mandolins which may or may not be a good thing depending on taste. The Kentucky has more of a high end mandolin finish and look than the Eastman. The Kentucky comes with a hard case and the Eastman comes with a gig bag. Playing out in clubs and gig bags aren't a good fit. If you were a new to music type I would recommend the Eastman because it is an instrument that a newbie will grow out of in a few years. Since you aren't I am recommending the Kentucky because it will fit your needs now and in the future. IMO the Kentucky is the better mandolin. Also... since you play in a country band I recommend a K&K pickup be installed because fighting a drummer and an electric guitar with a mic'ed mandolin will just pi$$ you off...... that's my .02$ worth..... I would always recommend anyone with a budget to buy an A style mandolin rather than an F style. Although there may be exceptions, for the most part, an A style mandolin at a given price point ($700 in your case) will be a far better instrument than an F style at the same price point.
If price is no object, there are some lovely mandolins with scrolls, but you'll pay for them in money or quality..
